Its single most outstanding feature is the unbelieveably fine forging of its carbon steel blade, which tapers to whisper thinness in a way that very few other Henckels chef knives you've ever seen do, yet sacrificing nothing in the way of strength or performance. THIS is the very essence of craftsmanship in a hand-forged knife and I promise you that the man who created this specimen was a long-time master using his arm, his hammer and his expertise, not some hungover, semi-skilled factory worker operating an automated pneumatic hammer, as is the case today.

It comes in very handy medium size, measuring 7-3/8" long with a 12-5/8" blade but in terms of its balance and feel in the hand, it handles like a much smaller piece. There is no finer compliment.

Henckels of Solingen, Germany, it comes hand-forged with integral carbon steel blade/bolster/tang construction, with wooden handles, not plastic, triple iron-pinned, not riveted, onto its full and tapered tang, as warm in the hand as it is easy on the eyes. It's blade is made of beautiful carbon steel, and will hold a razor's edge, with relatively easy honing. It is RAZOR sharp right now, ready to begin a new lifetime of outstanding performance for even the most demanding of chefs. If you've never used a carbon steel knife before, you're in for a treat.

Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! When you hold a knife like this it feels like an extension of your hand, not like something you're simply holding, and there is nothing you can't do with it. The blade is stamped, J. Henckels Twinworks, Solingen, Germany, " with an additional stamp reading "Grand Prize, St. Louis 1904, Paris 1900, iseeming to indicate that this design was a prize-winner at those expo's. It's RAZOR sharp, having been given a professional edge for the purpose of this sale, and it's ready to serve a useful lifetime of dicing, chopping, slicing and generally making fast work of whatever you put in its way. You might not be aware that Henckels knives began to use recycled steel stock in 1987, but this knife was made from virgin steel many, many years prior to that, at a time when the company was fully worthy of their near-legendary reputation for excellence. The difference in quality may surprise you. It's what you should expect from one of Germany's finest cutlery makers and it really is much more beautiful than today's composite-handled equivalent.
