This exceptionally fine vintage bullnose butcher knife comes in a very handy and desirable medium size and has everything going for it you could want--even better looking in person than the digital photos make it look.

Its hand-forged carbon steel blade and its beautiful, old-growth beechwood handlea are as useful and comfortable as they are beautiful to look at. Condition is outstanding, and there is no damage to blade or handles--rare for a piece of this construction, since they're usually found only after having been so extensively used as to be unrecognizable. The handle of this piece is particularly noteworthy for its outstanding cast aluminum finger-guard, which expertly joins handle and blade, strengthening both in the process, and keeping your fingers where they belong when using the knife--on your hand.

The piece enjoys an extra bit of heft in the hand because of it, and further inviting its use you'll start looking for meats to trim! Is the silky feel and patina it has acquired over the years from the passing of many years and the touch of many hands. Even for many veteran chefs this knife will present a refreshing world of performance. This piece was made in Sheffield, England by John Wilson, the I. In their name is actually an old-fashioned way of printing the latter J one of that city's more storied cutlery companies best known here in the USA as makers of knives in large quanitites that were used to trade with Native Americans. It comes in a highly-desirable size, measuring 12.5" long with 7.75" blade, permitting use by any size chef. It's entirely stiff and sturdy like a hunting knife and more than a few knives like this have found their way into eager hunting hands for dressing game in the field.

If you've only used stainless steel knives until now, you will find a refreshing experience of oustanding performance in using a fine vintage carbon steel blade such as this. Easier to hone to a razor's edge and easier still to keep it that way, carbon blades require the user to keep them dry to prevent rusting, but this minor inconvenience is more than offset by the superior performance provided. Knowledgable chefs and butchers alike have always preferred carbon to stainless blades, and once you've used one, you'll soon know why.
