Though this knife is not stamped with the name "L'Enfer, " we're guaranteeing its identity--and, more importantly, its QUALITY--as 100% of L'Enfer Sabatier manufacture. The L'Enfer brand (L'Enfer means "Hell" in French) often experienced resistance in the American market because their logo and identity were inextricably tied to an image of the Devil, a bit risky on the puritanical American market.

The L'Enfer works earned their name and were known in French as "the hollows of hell" because they consisted of an early 19th century factory with hundreds of hand-forging stations, in which temperatures often exceeded 100 degrees. To avoid conflict with fire-and-brimstone types over here, they often used other logos for their knives, and this one, with its running chef holding a knife under his arm on the blade, is one of those We're not the devil!

As you'd expect, it will shave WAFER-thin speels from potatoes, apples or anything else but is also designed to execute the intricate detail cuts associated with garnishing, decorating and otherwise performing culinary surgery--a VERY highly treasured knife in the serious chef's kitchen. For the purpose of this sale it has been given a professional edge that will surprise even many veteran chefs; it can literally shave a man's face if needed to do so. With its RAZOR sharp 4-3/8" blade (it's 9" long overall), its condition is equally superb, with no damage to blade, no cracks or looseness in handle. The difference only begins with the aesthetic, and in terms of performance, you will not find a better peeling/paring knife at any price--period.

There are few words which adequately describe it more than just plain Wow! " It was expertly hand-forged with an integral bolster and rat-tail tang that's hidden inside its solid ebony handle, pleaseingly curved to fit the hand perfectly and finished with a grooved "high-hat ferrule for reinforcement at the bolster.

It's almost a Nogent-style handle, but not quite. Still, the great deal of labor that goes into this design favors a lighter-weight, higher degree of balance and, in my humble opinion, the finest craftsmanship and beauty in a chef's knife. As with all fine vintage carbon steel knives, it will rust if not carefully kept dry during use, but you'll be richly rewarded for your trouble with superior slicing in every way, shape and form. Carbon is also easier to rehone and does not require a blacksmith's skills to achieve the finest possible edge.

A knife like this elevates the mundane tasks in any kitchen to an art form, and may even spark your imagination to new levels of creativity in the kitchen.
