This SUPERB vintage butcher knife is a somewhat rare and unusual find--a premium-quality piece in every respect. It's a style that has been called, alternately over the years, a bullnose, an American butcher knife or just a straight steak knife, but by any name its quality shines through in every detail. Hand-forged in Massachusetts by Russell, in their legendary Green River Works, it is an older piece that dates most likely to the years shortly before the Great Depression of the early 1930's. Though it has been used and sharpened it's still in excellent, ready-to-go-to-work condition--BETTER THAN NEW in terms of the sharpness of its edge, which has been honed so razor sharp for the purpose of this sale that we guarantee it will thrill even the most jaded user. The twine-wrapping provided the surest possible grip when the knife would be used in wet, slimy or even icy conditions. MANY have been "borrowed" from these original users, though, by envious land-lubbing users who recognized a GREAT thing when they saw one. As you can see in the photos, this twine-wrapping also delivers an element of beauty that most such knives can only dream about. In terms of its performance, it's as good as any butcher knife has a right to be in cutting and trimming steaks and other cuts from a larger side or carcass--nicely balanced in the hand, with a 10" carbon steel blade (15-1/8" overall length). The blade of this particular knife is hand-forged with a tapered tang.

Blade is hafted onto gorgeously mellowed and patinated beechwood handles that are fixed to a full and tapered tang. If you've been looking for just the right vintage butcher knife, one that has mellowed only in appearance, but still carries a big-time BITE, look no further. Is blade is 100% carbon steel, which takes a RAZOR edge and keeps it with relatively easy honing. If you've never before used carbon steel knives, you're in for a true revelation: carbon steel knives attain RAZOR sharpness with great ease and can be rehoned without the assistance of a blacksmith, unlike overly hardened modern stainless knives. You must wipe the blade dry with each use, but this minor inconvenience is much more than offset by superior performance.

True professional chefs and butchers have always preferred carbon steel knives, and once you've incorporated one into your arsenal, you'll soon want more. And NOTHING will make faster work of game or livestock, if you're butchering your own. The curved shape of the blade allows for perfect and sure cutting on a single stroke--every time--and has numerous uses in any gourmet kitchen, amateur or professional.
