It also demonstrates the way that "Sabatier" had, at one time, come to mean "French-style chef knife, " in the American vernacular the way Kleenex has come to mean facial tissue or Xerox has come to mean any copier. Its blade markings are stamped, "SIMCO, USA, SABATIER STYLE, HAMMER FORGED, " along with the fleur-de-lis logo. That logo also being stamped onto its handle helps us date it to the 1920's. It was constructed in the classic French chef's configuration, with a wide blade hand-forged from fine, virgin cutlery steel at a time when such attention to quality was the norm rather than the exception. It has everything going for it one could hope to have in a chef's knife. In addition to the superb quality of its carbon steel blade, its construction is world-class, with handles triple-riveted over a full and finely tapered tang. As remarkable as its handles, though, is its size, which is BIG and wide (12.5" blade that's 2-5/8" wide at base, 18 overall length). In my esteem, however, the knife's single most desirable quality is the lightness, balance and speed that it enjoys in the hand, despite its rather large footprint. This is NOT a cuisine massive, one of those very heavy duty knives of this size. It is, instead, a graceful giant, capable of turning your inner demon loose in the kitchen, to the utter horror of onions, celery or anything else you need to chop fast and furious.

I have not seen another knife of this size by any other maker handle so well--you could easily accomplish any job in the kitchen with it, including precision work of every description. It's been used but remains in very good condition, as the photos show, with a full blade and undamaged handles--ready for another lifetime or two of outstanding service. Best of all, perhaps, this exceptional knife was recently given an EXTREMELY sharp professional edge and must be treated with extreme care. You can literally shave your face with it. In the old days, many classically trained French chefs didn't consider a knife fit for professional use until it received its first "working" edge upon receipt from the factory.

Sushi chefs continue this tradition with their rituals of water stones and the resulting keen of their blades is virtually alien to most home cooks (and to many professional chefs) of Western indoctrination. This knife comes pretty close to just that kind of sharpness, but please exercise MAXIMUM caution, since a careless user may find himself in the E.
