It is, without a doubt, among the single most impactful cleavers you'll ever wield with one hand. It's purely French in style and in terms of its quality of materials, craftsmanship, performance and condition, it's one of the best, too.As you can see from the photos, it's blade was hand-forged from a single, solid piece of superb-quality carbon steel and has acquired the normal discoloration and patina that attest to its age, which is probably well over 100 years old. Blade is integral to its full and fatted tang, which was hafted with oxhorn handles using hand-wrought nickel-silver rivets, which is echoed in its nickel-silver bolsters, pommel and its VERY rare brass handle linings.
At the time of its manufacture nickel silver was pricey and its use on this cleaver demonstrates that it was a premium piece. The overall effect is stunning, as you can clearly see.
To say the least, such a cleaver was the work of a master craftsman because they absolutely NAILED it on this one. In other words, when you hold it in your hand, your first instinct is to start looking for things that need cleavering--for example, a rhinocerous leg or something similar.Most such cleavers from France are usually unmarked but this one does have a maker's mark. It's partially obscured by age and use but I can make out, "_____EC PERE, " indicating it was from a family of cutlers and was made by the elder father. I don't recognize this mark but if you do please drop us a line.
In fact, it was probably not made in a factory at all but rather by some skilled local producer--a collective or communal producer. If it was produced in a factory its operations were probably one of those ultimately swallowed whole by the consortium of companies we know today as Sabatier. It is found here in excellent condition with an edge that is ready to serve any chef or butcher straight out of the box. It's more than enough heft for any modern user.
As you can see in the photos, it has acquired a VERY nice patina and has looked this way since we obtained it long ago. It will only get more beautiful with time and use but keep in mind that like all carbon steel knives it must be kept dry to prevent rusting.
