In the late 19th and early 20th centuries, several American makers produced cleavers like this one, which was made sometime in the early 1900's, but none finer than this one, which has no markings legible but was almost certainly made in upstate New York by Foster Bros. Very few others made them so hefty, nor wrapped the butt of handle so expertly.

They produced some of the finest cleavers and other butchering tools ever made in this country, primarily to supply the vast stockyards of New York City, Buffalo and Boston, but rarely will we see one like this, which was made for sale to the fish market, not the meat-processors. It's an extra-large piece, made to be used with two hands--not quite so large as a hog- or beef-splitter but MORE than big enough for most fish. With a blade and tang that were hand-forged from a single, very large billet of fine carbon cutlery steel, its handle was made by tightly winding a thick strand of waxed leather around and around, woven into its lanyard hole and back around until it was as tight as industrial technology could provide. Just look at it--truly a thing of beauty and a masterpiece of the cutler's art.

Well over 100 years later, it's still incredibly tight, still providing the sure grip its makers intended, to keep safe the fingers and hands of its users. It measures a whopping 20" long with a blade that's 10.25" long by 5.75" wide at its humped tip--a full 1/4" thick at the top of its handle, giving it considerable heft (it weighs in at 62.5 ounces) and size, leaving very little that can't be sundered into two pieces with it. Of course, you need not use it on fish alone. It'll be just as adept in any meat locker processing game or livestock, and many hunters will find a cleaver like this invaluable in quartering out a deer or clearing brush quickly when assembling a blind or deer stand.

More than a few wise and seasoned hunters can be found in the woods on opening day with one of these in their truck, and those hunters are the ones usually going home with some antlers. Whatever you use it for you'll know you've picked up an American classic, especially when you sharpen it. For the purpose of this sale we've already had it professionally edged and it's now WICKEDLY sharp in a way that very few users have ever experienced; it's guaranteed to thrill.

Nothing hones up quite so nicely or so quickly as the carbon steel blades of this vintage, and even though you must keep it dry to prevent rusting, this minor inconvenience is more than offset by the fantastic performance offered by carbon steel.
