We FULLY warrant that iit's a Tichet knife, though, and the rest of its stampings (including one under the heel of the blade that we didn't get a picture of) are entirely those of actual Tichet knives, especially that of Montmartre, the Paris neighborhood where it was made.

In terms of size, quality of materials, craftsmanship and especially condition, it just doesn't get any better than this anywhere. We didn't think so. Of course we're confident that won't happen, because once you've held this incredibly fine knife in your hand you'll want only to keep it. So full is this knife with the kind of details that make it something truly special that it is difficult to know where to begin in describing it. Known in France as a " cuisine massive , " or sometimes " chef de chef , " this knife is, in any language, a magnificent piece of professional grade cutlery and it's even more beautiful in person than the digital photos make it appear.

It was hand-forged in Paris by the maker Tichet, who often produced Nogent-style knives with extra-plump handles, as this knife certainly has. Another Tichet trait it exhibits beautifully is the taper of its 13-3/8" blade (which is 3" wide, knife is 19 overall) which begins at the hilt at just under a half-inch thick but quickly tapers down to a whisper, giving the knife superb balance in the hand.

It's the only knife any skilled chef will ever need and by comparison to what's available on the modern market it is a man among boys. Best of all, it has been professionally edged for this sale to be virtually sharp enough to shave a man's face. Caution, please, or the careless user may find himself in the E. Its blade was hand-forged by experts working in an apprentice-journeyman-master system that was the essence of fine craftsmanship and is virtually gone from our modern economy. The handle is a solid piece of African ebony carved into an extra-large size that greatly favors a larger hand, as does the extra blade-width, which provides maximum knuckle clearance, turbo-charging of your chef knife to permit the speediest possible performance in chopping, dicing and mincing like a demon. It was produced to be beautifully balanced in the hand to permit the speedy dispatch of any kitchen's most demanding and delicate chopping tasks. This singularity of purpose in the kitchen represents an entire "one-knife kitchen" philosophy still embraced by many old-school chefs brought up in the traditions of the French Ecole Ritz-Escoffier. Chefs educated (and tortuously apprenticed) in this tradition know the true value of such a knife and become quite passionate in putting forth their argument as to why it's the only knife any true chef will ever need. The old guys love ANY opportunity to show off their knife skills, too! Whether you ascribe to that philosophy or not, you will, after one or two uses, soon agree that such a knife is indispensable to any serious chef. It lacks nothing when it comes to superiority of materials and workmanship, and comes to you here in SUPERB condition.

Despite its size, though, this knife is perfectly balanced and holding it in your hand, it feels more like an extension of your arm and less like an object you're simply holding. As with all carbon steel blades, it will discolor and rust if not properly maintained by wiping it dry after each use.

This mild hassle is more than offset, though, by the superb performance of a carbon steel blade. If you've never used a carbon steel knife before, you're in for a revelation. Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure. The knife was also hand-forged from virgin steel, unlike modern knives by Henckels, Wusthof or Sabatier, which are hot-drop forged from recycled steel nowadays i.

The difference in quality is remarkable. This knife is the only one of its kind I've seen in such good condition and it is our concerted opinion that his asking price constitutes a bargain, especially when it is considered that to construct anything comparable today, one would have to commission a master custom knife-maker and pay more than double.
