In person none of these exist; we will say so in the description if it may be otherwise. This gorgeous antique French chef knife is nothing less than a wolf in sheep's clothing, found here in excellent condition with no problems of any kind.

At first glance it may appear to be a mere thing of beauty--and it certainly is exactly that--but you'll need to use it just once to know that's it's also capable of a world of speed, precision and authority in any kitchen. Its blade is stamped, " "CHARLES FRANCE, J.

, " but that doesn't tell us who made it; "Charles was Charles Meniere, its French exporter and Busch was its original retailer in New York City during the early 1900's. It was probably made by one of the companies in Thiers that would later bear a Sabatier label. There's no way of knowing which one, at this point, but there's also no denying the outstanding beauty and utility of such a piece, nor the quality of its superb, hand-forged blade. This blade is identical to those usually found on a nogent-handled piece, with a hidden, rat-tail tang. With its beautiful stag handle, this knife most likely came from a fancy carving set or viande, but the blade is identical to the finest nogent-style chef knife blades--forged much thinner than most modern chef knives but sacrificing nothing in the way of strength and stability--the very essence of what constitutes expert craftsmanship in forging a blade.

This blade is full and RAZOR sharp, affixed to the stag handle by virtue of a white-brass ferrule, very much, again, in the nogent style. The stag itself is a functional and comfortable as it is beautiful, providing the hand with a BEAUTIFUL grip. Expertly hand-forged from virgin steel, it's as good as it gets and beats by a mile just about anything in the modern market, where robotically controlled mass production has all but eliminated craftsmanship from cutlery, as any visit to your local mall will confirm.

Its finely pointed blade measures 9-3/8" long (knife is 14.5" long overall) and can do just about any task demanded of it in any kitchen, amateur or professional. From slicing (it will WAFERIZE an onion) to chopping chores its usefulness is limited only by your imagination. You KNOW how difficult the finest pieces of vintage French cutlery are to obtain.
