With exotic beauty and maximum functional quality, this is simply one of the finest knives of its kind ever made and without a doubt one of the oldest we've yet been able to offer. We didn't think so. It dates to the period of the 1870's, the years this famed maker was in business, but can still perform rings around just about anything in the modern marketplace. In terms of craftsmanship, condition, materials and utility, it is superb. We're often asked for finer vintage paring knives in carbon steel, primarily because they're the hardest ones to find in usable condition, but this one should exceed the requirements of even the most delusional chef. It comes from Edward Barton & Co.
One of Sheffield, England's smaller family makers of fine cutlery, whose legendary razors are more well-known than their kitchen cutlery, but not more impressive. Hand-forged with an integral blade/bolster/tang, it possesses the kind of superior steel that made Sheffield famous. As you can see in the photos, it is just incredibly well-preserved, from point to pommel. Even more striking than its blade, I think, is its stag handle, which was selected not only for its beautiful graining but also for the way its natural curvature matches the natural contours of the human hand. To find this knife in any condition is nothing short of RARE and to find it in this condition is nothing short of amazing.
Incredibly, this handle is fully intact, rock solid in every way. It outshines and outclasses anything in the modern marketplace by a VERY wide margin, and if cared for properly, will probably outlive its owner and then some. Even more than its beauty and condition, the most remarkable thing about the piece, by far, is its performance in the kitchen. It is a VERY remarkable knife, indeed, waferizing anything you'll put in its way. Measuring 8.25" in length with a RAZOR sharp 4.5" blade, it's most obvious applications would be peeling, paring and other utility work, and for any of your kitchen's most demanding precision work, it will truly excel.But it's also long enough to be used as a smaller chef knife or slicer, waferizing an onion in a snap or performing a small chiffonade without skipping a beat. Best of all, this exceptional knife was recently given an EXTREMELY sharp professional edge and must be treated with extreme care or will land a careless user in the ER needing stitches. In the old days, many classically trained French chefs didn't consider a knife fit for professional use until it received its first "working" edge upon receipt from the factory. Sushi chefs continue this tradition with their rituals of water stones and the resulting keen of their blades is virtually alien to casual (and to many professional) users of Western indoctrination. This knife comes pretty close to just that kind of sharpness and you'll have no trouble finding a myriad of uses for it.
