If you've been reading our ads over the years you already know that we have friends in Italy who constantly scour that country's corners to find for us the beautiful older knives that once were used in homes, restaurants, bistros and butcher shops, many of which were not made in any factory, but were produced locally, often by the same person who ultimately used them.
It's a bit more beautiful than its brother, made with a slanting front and a dog-bone shaped handle at the pommel. Just look at it--a work of the cutler's art.
The knife was made with a carbon steel blade, RAZOR keen, having been professionally edged for this sale by the good folks at Ross Cutlery in downtown Los Angeles, one of the best in the business--FAR sharper than when it was new and FAR sharper than most cleavers ever can be. Blade is hand-forged carbon steel and handles are gutta-percha or perhaps compressed leather--hard to tell which on this one--joined with hand-wrought copper rivets over a full tang. It's expertly joined with the handle--seamlessly--creating an utterly unique profile that you won't be seeing anywhere else anytime soon. This knife is ideal, of course, not only for collecting but also for use and any chef will immediately recognize the value of such a piece. Measuring 10.5" long with a 6.25" by 3.25 blade and weighing in at 20.8 ounces, it has all the size and heft that most users will ever need.
It also can be successfully employed like an oriental chef's cleaver for chopping veggies, dicing or mincing herbs--you name it. Whatever you may use it for you may be sure you will do so more efficiently and with more grace and beauty than any other cleaver you may already own.
