Though it still retains most of its original factory shine, like stainless steel, it's blade is made of beautiful carbon steel--INCREDIBLY sharp now, having been professionally edged for this sale by the good people at Ross Cutlery in downtown Los Angeles and guaranteed to THRILL. The knife predates the industry's conversion from virgin steel to recycled and represents a level of craftsmanship and quality that are now lost to the economic realities of our age.

Wash the knife by hand and wipe clean immediately thereafter. Wipe the knife clean when using it on wet or acidic foods. It WILL rust if not maintained properly. I apply a very thin coat of non-toxic mineral oil to blade and wooden handles periodically, to seal them from ambient moisture in the atmosphere (olive or corn oil will suffice).
