Made in Germany by Wusthof sometime in the 1950's-60's, this outstanding piece was made with a hand-forged carbon steel blade with integral blade/bolster/tang construction, beautiful desert ironwood handles triple riveted onto its full tang.

Though it still retains most of its original factory shine, like stainless steel, it's blade is made of beautiful carbon steel--INCREDIBLY sharp now, having been professionally edged for this sale by the good people at Ross Cutlery in downtown Los Angeles and guaranteed to THRILL. Wusthof, Dreizackwerk, Solingen, Germany (with trident logo), 147-8. The knife predates the industry's conversion from virgin steel to recycled and represents a level of craftsmanship and quality that are now lost to the economic realities of our age.

It is an incredibly fine and well-balanced knife that surpasses just about anything else from Germany in the modern era in terms of feel and performance. At 13" long with 7.5" blade, the knife comes in a very handy medium size that will appeal to any size hand. In this configuration it's every chef's best friend in the kitchen when it's time to chop, dice, and slice large quantities of vegetables, fruits, meats or anything else into neat, bite-sized morself for inclusion in your finest recipes. If you've never used a carbon steel knife before, you're in for a treat.

Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! A WORD ABOUT MAINTENANCE: Never use a dishwasher. Wash the knife by hand and wipe clean immediately thereafter. Wipe the knife clean when using it on wet or acidic foods. It WILL rust if not maintained properly. I apply a very thin coat of non-toxic mineral oil to blade and wooden handles periodically, to seal them from ambient moisture in the atmosphere (olive or corn oil will suffice).
