This INSANELY RARE kosher slaughter knife is only the second one I've ever seen and the other is in my own personal collection. It comes from America's most legendary maker of blades and in terms of its quality of materials, design, craftsmanship, performance and condition, offers everything any collector or user alike could ever hope to find and much more.

It was made in Massachusetts by John Russell in their legendary Green River Works and is one of those rare pieces that proves beyond doubt that when the best American makers put their minds to it they could produce knives finer than anyone from Germany, England or France. Who made it is beside the point, however, when you consider just how well it was made and especially when you consider how well it has been preserved. It looks amazing in our photos but in person it is even better.

It's a VERY large knife but at 19-" long with a stiff and sturdy 13.25" blade it's considered a medium-sized knife, meant for the swiftly humane slaughter of medium-sized livestock like goat or lamb. It was made in the classic French Nogent style with a hidden tang inside a solid African ebony handle, named for the French city in which this style was purportedly first manufactured but with a few important distinctions. While its handle generally fits the classic French birdshead profile it's more rounded in a way that I've come to believe is uniquely American. Also noticeable, of course, is the sheepsfoot profile of its point; according to kosher law the blunted point does not frighten the livestock, as might a pointed tip and the entire point of kosher slaughter is to respect the dignity of another living thing, even when you intend to eat it--maybe especially so. It's blade was superbly hand-forged from some of the finest carbon steel ever hafted for culinary used, expertly joined to its handle with a forged iron ferrule to reinforce the critical juncture where blade meets its beautifully sculpted handle.

This handle was made from African ebony of the finest quality, pleasingly rounded to meet the contours of the human hand. Just look at this handle and at the entire piece: a work of the cutler's art. You don't even need eyes, however, to appreciate just how beautifully made this knife was made because once you hold it in your hand you'll recognize its feel, which tells your hand that it belongs there and always has. THAT is achieved only by the kind of craftsmanship that is virtually extinct in the modern market for kitchen knives and to get anything close to it you'd have to commission a custom maker and pay several times more than we're asking for this knife. Of course, it's also an ideal blade for slicing, carving and virtually waferizing anything and everything in even the most demanding kitchen or meat locker. Despite its obvious collector value it'd be a crime not to use such a knife if you're a serious butcher or chef because it will out-perform anything else you've used. It's WICKEDLY sharp, as we found it. Guaranteed to thrill even the most jaded chef but you must exercise caution or the overly enthusiastic user may find himself in the E. This is the rare piece where words simply fail to do justice and it's also the kind we won't be able to offer twice. In well over 50 years of active collecting it's only the secon one we've ever seen and the other is in my own personal collection.
