In an unusual profile with an equally unusual attention to detail, you're looking at a smaller chef or paring knife of singular quality in every way.It's a bit of a mystery as to who made it; clearly stamped only "N&S, SHEAR STEEL, " it's almost certainly British but which maker it does not say. Who made it, though, is secondary to how well they made it and its obvious quality is no mystery at all.
In terms of its quality of design, materials, craftsmanship, condition and especially performance, it offers anything any user or collector alike could ask for--and much more. Made with a clipped, fully-forged and integral carbon steel blade/bolster/tang construction, it's a superbly crafted piece on par with the best ever made. Its ox-horn handle is fully intact, free of cracks or looseness, pinned in brass, perfectly curved to fit the human hand. Most striking of all is the incredibly fine finial cast in brass that covers the entirety of the pommel. The knife dates to the period of mid-late 1800's and the entire piece has a great patina; it looks pretty damned good for being well over 120 years old!Even more than its beauty and condition, though, the most remarkable thing about the piece, by far, is its performance in the kitchen. It is a VERY remarkable knife, indeed, waferizing onions, meats and anything else you'll put in its way. Blade is RAZOR SHARP, having been professionally edged for this sale and is now capable of bringing tears of joy to even the most jaded chef. Measuring 9.75" in length with a deft 6" blade, it's large enough to be used as a smaller chef knife for chopping, dicing, mincing, small slicing duty, etc.
But deft enough to be used for peeling, paring and other utility work. You know how difficult it is to come by fine, smaller chef knives in carbon steel, since most knowing chefs won't part with theirs until they're dead of the knife is worn out.
