Though it has been used and sharpened--EXPERTLY--this incredibly fine vintage carbon steel slicing knife is one of any serious chef's most prized possessions and is MUCH more beautiful in person than the digital photos would make it appear. Its markings have been worn away by use and by scrubbing but we fully guarantee that it was hand-forged in Sheffield, England. Especially its handle shape is a dead giveaway, and it was most likely made by the John Wilson company--one of that storied city's most legendary makers of fine cutlery of every description. Was an old-fashioned way to print the letter J, it comes from the company's finest series of cutlery, made with integral blade/bolster and tapered tang. But they have produced some of the finest knives of every description that Sheffield has ever made. This one dates to the 1920's-30's when craftsmanship in Sheffield was at its highest. This knife was made with fine boxwood handles that are as warm to the touch as they are easy on the eyes, hafted over the carbon steel blade using five small brass pins. It is THE carving knife when it's time to produce wafer thin slices on a single stroke, each and every time. This is NOT a trenchelard, a more common French slicing knife that's halfway between a chef knife and a slicer. It was made purely for slicing and carving, though it would be hard to name a better knife for filleting fish, too. It has sacrificed the versatility of a trenchelard, however, to enable it with greater slicing prowess, the likes of which most chefs are probably unfamiliar.

In this majestic size, with 11-5/8" blade (measures 16-7/8" overall), it never feels heavy and even a user with small hands will find only comfort and balance in wielding it in the ongoing war against unsliced foods. Whether you'll be using it to slice a large roast beast or want something that can consistently produce transparent slices of onion, you'll soon learn that is a thoroughbred Arabian steed for slicing. Though this knife retains much of its original shine, like stainless steel, it is, in fact, carbon steel and must be kept dry during use or will rust and stain.

If you've never used a carbon steel knife before, you're in for a treat. Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! This knife is perfectly balanced and will make you wonder why you suffered for all these years without one.

Notice how the tang of the blade extends all the way through the handle, and the way the tang grows more thin as you get closer to the butt of the handle AND towards the tip? When you hold a knife like this it feels like an extension of your hand, not like something you're simply holding.

Best of all, perhaps, this exceptional knife was recently given an EXTREMELY sharp professional edge and must be treated with extreme care. You can literally shave your face with it. In the old days, many classically trained French chefs didn't consider a knife fit for professional use until it received its first "working" edge upon receipt from the factory. Sushi chefs continue this tradition with their rituals of water stones and the resulting keen of their blades is virtually alien to most home cooks (and to many professional chefs) of Western indoctrination.

This knife comes pretty close to just that kind of sharpness, but please exercise MAXIMUM caution, since a careless user may find himself in the E. As the photos show, it's been used and sharpened but it is still remarkably well-preserved, with full blade and handles free of any cracks, looseness or other problems. Whether you're an amateur or professional chef, you know how important the finest cutlery is to your state of mind while cooking.
