Unlike contemporary knives made by Sabatier, this vintage Sabatier Professional knife possesses a hand-forged blade contemporary ones are hot-drop forged, i. By machine made from superior virgin stainless steel, with a degree of detail and finish that is simply not possible in the economic reality of today.

It also bears the name of Cross, its original importer/distributor, which helps us date the piece to the late 1970's. Unlike the contemporary knives of today, the knife has a feathered tang, which provides it a measure of balance and "feel" that set it apart.

Hold it in your hand and you'll immediately recognize a natural center of gravity in the center of your palm--where it belongs. Modern Sabatier chef's knives use a tang of uniform thickness (it's cheaper to produce, easier to fit with the handle, since that can be done with automation, not the skilled hands of expensive skilled labor, as was the practice in the past). Also unlike today, the knife was not made from recycled Hyundai's and Fiats, and is NOT prone to stress fracture under duress, as many contemporary knives are.
