And constructed in the classic French chef's Nogent-style configuration, you're looking at one of the finest professional cutlery blades ever produced in the USA and so well is it preserved that it's ALMOST as it appeared when it first left the factory, well over 100 years ago. It was hand-forged in New Britain, Connecticut by Landers, Frary and Clark from fine, virgin cutlery steel at the turn of the last century, a time when such attention to quality was the norm rather than the exception. Thump its blade with a finger and it SINGS. In short, it has everything going for it one could hope to have in a chef's knife--size, design, materials, craftsmanship, condition--and much more.

You might be surprised to find that this American-made French-style knife is every bit as refined as those made in Thiers, with a blade that is VERY finely tapered and lightweight without once sacrificing strength. Handle is old-growth rosewood of the finest quality with none of the hairlines or other problems that too often bedevil knives of this age and style.

Like all knives in this nogent style its handle is pierced with a hidden, rat-tail tang, anchored at the pommel. Like any chef knife, its main job in the kitchen is to chop, dice and mince and this knife is no slouch on thar front. Despite its massive size it handles like a Porsche 911, not a Hummer. The blade is surprisingly thin for its size, at just over 1/8" thick at the top of its handle, tapering nicely towards the tip, allowing the user to enjoy all of the benefits of a larger knife with none of the clunky drawbacks; it weighs in at less than some German chef knives made today with a 10" blade.
