Henckels of Solingen, Germany, this is a very special vintage piece, found here in the largest size they ever made, brimming with all the size, quality and condition one could hope to find and more.

This beautiful chef's knife comes hand-forged with integral carbon steel blade/bolster/tang construction, with ebony handles triple-riveted onto its full and tapered tang, as warm in the hand as it is easy on the eyes. It's blade is made of beautiful carbon steel, and will hold a razor's edge, with relatively easy honing, and is exceedingly sharp right now, ready to begin a new lifetime of outstanding performance for even the most demanding of chefs. It has been used and sharpened, as you can see in the photos--EXPERTLY--and the knife has only been meticulously maintained throughout its life. If you've never used a carbon steel knife before, you're in for a treat. Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance!

Despite the knife's enormous size (20-1/8" long w/14-3/8" blade) this knife is perfectly balanced and never feels clumsy or clunky. It weighs in at an impressive 17 ounces, lacking for nothing in the way of heft--a hefty demon that is guaranteed to THRILL even the most jaded chef.

When you hold a knife like this it feels like an extension of your hand, not like something you're simply holding, and with it there is nothing you can't do in even the most demanding kitchen. The blade is stamped, J.

It has a MUCH more finely tapered blade than most and is a speed demon in capable hands. You might not be aware that Henckels knives began to use recycled steel stock in 1987, but this knife was made from virgin steel many, many years prior to that, at a time when the company was fully worthy of their near-legendary reputation for excellence. In fact, it was hand-forged, as evidenced by its tang, which tapered more thin toward the bottom, for greater balance in the hand.

The difference in quality may surprise you. It's what you should expect from one of Germany's finest cutlery makers and it really is much more beautiful than today's composite-handled equivalent.
