It has been used and has acquired some patina from being over 60 years old but it's in superb condition with no problems of any kind. And in one important way, this knife is better than when it was new: it has been given an edge so profoundly sharp you may shave your face with it. Produced as model 39714HG, this knife has a safety-style beechwood handle of the highest quality and comes in a HIGHLY desirably 13.25" blade size (19.25" overall length), DEEPLY hollow-ground, something that was once a Dexter specialty. It's extra-hefty, too, weighing in at an impressive 13.6 ounces. The shape of its safety handle is designed to help keep your fingers where they belong--attached to your hand.

This knife was made for use by men and women who took pride in their work as well as in their tools. The fact of this knife's survival in such fine condition is testament to that.

Once a skilled chef or butcher has used a true hollow-ground knife like this, they tend to be come fervent converts, proseletyzing as they go along. Like a barber's straight razor, it gets sharper faster and cuts with the utmost in precision.

Blade is Dexter's finest virgin American carbon steel, which must be kept dry. This minor inconvenience is more than offset by superior performance, though, as any chef or butcher can tell you. Originally, it was made to cut steaks, roasts and chops from a side or carcass--in a single stroke.
