And no matter what you've heard, SIZE DOES MATTER! Made in Esslingen, Germany by F. Dick and weighing in at a very light and fast 15.9 ounces, this is a knife that delivers all of the benefits of size with none of the drawbacks. Unlike the heavier knives that the French call a "cuisine massif, " it is, in any language, a magnificent piece of professional grade cutlery and even more beautiful in person than the digital photos make it appear. It bears a whopping 13.25" blade (19" overall) that is extra wide (2.75 at base of blade) but despite its size, is perfectly balanced and holding it in your hand feels more like an extension of your arm and less like an object you're simply holding.

Made shortly after WWII it's more than 70 years old but in superb condition with no problems of any kind. Best of all, it has been professionally edged for this sale and is now RAZOR sharp in a way too few knives ever are. The sky is the limit with this knife. It's blade was hand-forged from some of the finest carbon steel ever forged and it will continue to discolor and rust if not properly maintained by wiping it dry after each use. This mild hassle is more than offset, though, by the superior performance of a carbon steel blade.

If you've never used a carbon steel knife before, you're in for a revelation. Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure. The knife is also hand-forged, unlike modern knives by Dick, Wusthof or Sabatier, which are hot-drop forged nowadays i. Notice how the tang of the blade extends all the way through the handle and grows more thin as you get closer to the butt of the handle or towards the tip? You can't achieve that kind of detail even with the best technology--only with good old-fashioned blacksmithing and elbow grease.

The handle is a rare one from this maker, made of genuine old-growth beechwood, warm to the touch and easy on the eyes--much more beautiful than the ubiquitous black plastic found on pricey cutlery nowadays. There is virtually nothing a knife like this can't do, from chopping a clove of garlic into wafers to reducing a 50lb. Bag of onions into a giant mound of diced.
