Known in France as a "cuisine massif, " and in English alternately as a buffalo knife, a fishmonger's knife, lobster-splitter and a lamb-splitter, it's the knife you want to reach for when you only want to reach once. It's a style and size, though, that was uniquely German. It's also remarkable for its condition. Most pieces like this have cracked handles, chipped edges and numerous hammer marks on the top of the blade's spine, deforming it considerably. This has none of those problems, nor any other, and though used, its condition is flat-out excellent, and even better than new in one crucial respect: its edge is so finely honed you could literally shave with it. Its large curved carbon steel blade was hand-forged with a full tang, birdseye-brass riveted over a full and tapered tang with BEAUTIFULLY grained desert ironwood handles, which are warm to the touch and naturally oily, resistant to water in a way that all wood used for cutlery handles should be but isn't.

The wood is perfectly intact and free of any cracks, chips or other damage It's stampings read only, No. The entire piece is beautifully weathered and it just begs to be held.

Though it has some considerable collector value, it would be a shame not to use it, if you're able. Carbon steel blades of this vintage can hold a razor's edge like no other and it can still do more than its share of butchering of game or livestock. I have one that's similar and use mine as a cleaver for meats and also for sugar cane, which my wife cooks with from time to time. I have also carried one while hunting large game in northern climates and nothing has done a better job at quartering a kill in a hurry.

Its handles are as warm and comfortable in the hand as they are easy on the eye. Comes with a whopping 12-3/8" blade (18" overall length) that is 2.75 wide at its widest.

Weight is 31 ounces--just under two pounds! If you're simply collecting, you're in luck--this is a rare opportunity to add some authenticity and quality--not to mention SIZE--to your collection.
