Without a doubt, this is one of the finest chef knives you'll find at any price, and if you favor a lighter weight knife yet don't wish to sacrifice one bit of rigidity in your blade, look no further--THIS knife is for you.

In a word, it BLAZES, and using it is a joy. Most chef knives of this size and style are MUCH heavier, but this one weighs in at a mere 5.9 ounces. It measures 14.5" long with a 9.25" blade and is capable of a WORLD of possibilities--chopping, dicing, mincing, slicing, whatever--that the heavier knives can't manage, even in the most skilled hands.

Forged by hand in Solingen, Germany by Friedrich Herder and Sons, it's an older piece yet has NEVER been used. It's full of the kind of expensive, labor-intensive quality that ultimately contributed to the demise of this once-dominant maker of fine cutlery of every description. Unlike today's mass-produced, hot-drop forged blades i. By machine, it enjoys a fully hand-forged blade, as evidenced by its tapered tang, made from superior virgin steel. As such, it is quite superior to that made today by any but the most demanding custom cutlers.

I estimate the age of the piece to between the world wars, as evidenced by its spade logo. The handle is beautifully grained walnut with a striking and unusual pin-pattern, but is NOT factory made. A collector's piece though it is, it would be an utter shame not to use it daily. Though it retains its original factory shine, the blade is made of beautiful carbon steel, not stainless, and will hold a razor's edge with relatively easy honing. If you've never used a carbon steel knife before, you're in for a treat.

Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! This knife is perfectly balanced and will make you wonder why you suffered for all these years without one. When you hold a knife like this it feels like an extension of your hand, not like a weight you're simply holding.
