This OUTSTANDING butcher knife was made many years ago by Gustav Emil Ern of Solingen, Germany, world-famous for their superbly crafted knives, and comes RAZOR SHARP, having been professionally edged for the purpose of this sale by the good folks at Ross Cutlery in downtown Los Angeles, the best in the business. As such, it's FAR sharper than when it was new, guaranteed to THRILL.

It's an older piece, as evidenced by it's stamped (rather than etched) blade marking, forged from crucible cast steel rather than having been stamped mechanically from recycled steel, as has become the practice worldwide since 1987. The difference is profound: I've had several post-1987 knives snap in mid-use, but it simply won't happen with this outstanding blade. Its curved, sharp blade is carbon steel--beautifully pointed and ground in the shape of what's called a scimitar, cimeter or "curved steak knife, " though you'll probably never serve one to guests at the dinner table. It's original purpose is for carving steaks from a larger carcass or side of meat, but you'll find that many professional chefs prefer this style of slicing knife for a wide variety of kitchen tasks, including carving and shaving paper-thin slices of prime charcuterie, vegetables and even breads or cakes. And NOTHING will make faster work of game or livestock, if you're butchering your own. The curved shape of the blade allows for perfect and sure cutting on a single stroke--every time--and has numerous uses in any gourmet kitchen, amateur or professional. If you've never used a carbon steel knife before, you're in for a treat.

Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! This knife is perfectly balanced and will make you wonder why you suffered for all these years without one. When you hold a knife like this it feels like an extension of your hand, not like something you're simply holding. Measures 17-5/8" long with a HEFTY 12.25" blade, which is 1.75 wide. Blade is stamped, "GUSTAV EMIL ERN, SOLINGEN, GERMANY, " with their distinctive butcher block logo.

It's pleasingly sculpted safety-grip handle is solid ebony, warm to the touch and easy on the eyes. An outstanding piece in every respect for use or display and a true find.
