Please read our Terms below for details. This is the second of TWO incredibly rare and exceptionally fine antique Sabatier chef knives we're offering tonight, both in highly desirable and very hard to find smaller sizes. It's the smaller of the two, and the rarer by far.

If you're collecting this line and can only afford one, THIS is the one you want because the only other one I've yet seen is in my own collection and one of my kids has already called dibs on that one when I go. Offered here in virtually new condition--but FAR sharper--this superb quality chef knife is an exceptional find by any standard, measuring 9-5/8" long with a 5.25" blade. Obviously, its most outstanding feature is the incredibly beautiful rosewood handles pinned with old-fashioned birdseye rivets over its full and fatted tang in a very unusual pattern that features heavy iron bolsters at both ends. I date the piece to the 1880's-90's, though it could be even older than that; the fatted tang preceded the tapered tang in the evolution of hand-forged technology, though there were plenty of excpetions and overlaps.

The rosewood is, as you can see from the photos, beautifully figured, without any of the condition problems that so often bedevils these knives--just 100% whole and wonderful. Its maker's marks are one of the finest cutlery marks ever to grace a chef's knife, Sabatier's "Jeune, " with the grape-cluster and letter K with a crown logo. It's one of the most deft and solid Sabatier's I've yet seen, and I've seen more than a few. The genius of its handle doesn't begin and end with aesthetics: it's also a comfortable grip, made to be used, not just gazed at from behind a glass wall. It will slice, chop and dice as well as any knife you've ever used, and probably better.

This is the finest possible smaller knife for most chefs but for anyone with a petite hand it's nothing less than a GODSEND for use as a main knife. Despite its relatively modest footprint, it's also incredibly hefty and strong, capable of dispatching the largest pile of onions into teeny morsels. It tapers to a particularly fine point, useful for a myriad of applications.

It would be difficult to overstate its quality from either a functional or an aesthetic viewpoint. Best of all, perhaps, this exceptional knife was recently given an EXTREMELY sharp professional edge and must be treated with extreme care. In the old days, many classically trained French chefs didn't consider a knife fit for professional use until it received its first "working" edge upon receipt from the factory. Sushi chefs continue this tradition with their rituals of water stones and the resulting keen of their blades is virtually alien to most home cooks (and to many professional chefs) of Western indoctrination. This knife comes pretty close to just that kind of sharpness, but please exercise MAXIMUM caution, since a careless user may find himself in the E.
