Though it bears no maker's markings, this superb knife was certainly one made in Germany, probably by Henckels, though it could have also been made by one of the smaller cutlery companies that are no longer in business. Several makers of that stripe used relatively shallow stampings, or etched their blades, and this knife has been well-used enough to have had whatever markings it once had made illegible. Like many of the knives produced by smaller makers in Germany, this superb beauty is equal in quality to Germany's better-known brands, like Wusthof, F. It comes hand-forged with integral carbon steel blade/bolster construction and real rosewood handles triple-riveted onto its full and tapered tang. It's blade is made of beautiful carbon steel and if you've never used a carbon steel knife before, you're in for a treat.

Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! Best of all, perhaps, this exceptional knife was recently given an EXTREMELY sharp professional edge and must be treated with extreme care.

In the old days, many classically trained French chefs didn't consider a knife fit for professional use until it received its first "working" edge upon receipt from the factory. Sushi chefs continue this tradition with their rituals of water stones and the resulting keen of their blades is virtually alien to most home cooks (and to many professional chefs) of Western indoctrination. This knife comes pretty close to just that kind of sharpness, but please exercise MAXIMUM caution, since a careless user may find himself in the E. When you hold a knife like this it feels like an extension of your hand, not like a weight you're simply holding.

A WORD ABOUT MAINTENANCE: Never use a dishwasher. Wash the knife by hand and wipe clean immediately thereafter. Wipe the knife clean when using it on wet or acidic foods. It WILL rust if not maintained properly. I apply a very thin coat of non-toxic mineral oil to blade and wooden handles periodically, to seal them from ambient moisture in the atmosphere (olive or corn oil will suffice).
