This one is probably the most desiraable, made in the quintessential French chef knife size--14-5/8" long with 9.75" blade--with an equally rare rosewood handle. As you can see it was made without the extended, slightly cylindrical bolster we normally associate with French knives, made more in the shape of what is normally found in knives made in Germany or America. Some call them Canadian knives, which the Frenchmen of the cutlery guild who crafted these fine knives would have found silly (like a Canadian restaurant), but whatever you call this knife it will surely be one of the finest your kitchen has even seen. It was made in Thiers, France, from Sabatier's retired upscale "Professional" line of cutlery, some of the finest knives ever produced for the kitchen. As the photos show, it's remarkably well-preserved, with full blade, undamaged rosewood handles triple-brass riveted over a full and tapered tang--good as new and ready to provide a lifetime of outstanding service. In one key way, it is BETTER than new, having been given a professional edge for the purpose of this sale.

The German-style bolster does have a function, permitting greater control with the wrist and permits better performance for many users in small quarters--nice in a cramped kitchen, or when working a line. It's the perfect chef knife for chopping, dicing, mincing, slicing or just about any other task that presents itself in the busy kitchen of amateur or professional alike. It's getting harder all the time to find Sabatier knives of this vintage anymore, though you'll certainly want to, since the blade is forged from pure virgin steel (as was the norm prior to 1987) rather than from recycled steel stock, as is the practice today.

You might not be aware that Sabatier knives (like their German coutnerparts) began to use recycled steel stock in 1987, but this knife was made prior to that and the difference is real. I've had several contemporary knives SNAP in mid-use, but I've NEVER had a vintage one do it, and as a serious collector of vintage kitchen knives, I use the vintage ones in my own kitchen FAR more often.

Whatever name you decide to call it, this is EVERY skilled chef's most essential knife in the kitchen. If you've never used a carbon steel knife before, you're in for a treat. Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! This knife is perfectly balanced and will make you wonder why you suffered for all these years without one.

Notice how the tang of the blade extends all the way through the handle, and the way the tang grows more thin as you get closer to the butt of the handle AND towards the tip? When you hold a knife like this it feels like an extension of your hand, not like something you're simply holding.
