What makes it so special might not be readily obvious viewing the photos but once you've picked it up in hand you'll have no doubt. It's an incredibly handy size with an extra-wide blade that is sturdy and nicely weighted, reinforced at its bolsgter with a brass ferrule, joined to one of the most perfectly crafted chef knife handles you'll ever touch, carved from a solid chunk of beechwood and triple-riveted in brass. Though, over 50 years old, this superb smaller knife has never been used.

It has picked up some VERY minor shadows of discoloration from decades of storage but still it's 100% in every way. It was produced in Maniago--Italy's cutlery-making capital--by Pino, a company that never imported their hand-forged wares into this country but which enjoyed a SUPERB reputation in Italy itself. As you'd rightly expect from any Pino knife its blade was forged from some of the finest carbon cutlery steel ever made for the kitchen.

Though its blade is shiny like stainless, it WILL rust if not properly maintained and will discolor normally with use and time, so it must be kept dry, even during usage. This minor inconvenience is more than offset by the superior performance of carbon steel, as any chef over the age of 50 can tell you and the joys of using such a fine vintage piece can bring joy to their users in a way that the stainless steel knives of today never will. Like their collector counterparts, any professional chef would be DELIGHTED to own and use such a fine, professional grade piece of cutlery.

Surprising to many younger readers will be the fact that the edge was not at all sharp when we obtained this knife, though it is razor sharp now, haivng been expertly edged for this sale (by The Perfect Edge Cutlery and Chef Supply, in San Mateo, CA). In the old days many professional chefs preferred to receive their knives unfinished in order to apply their own edge, and they did not consider a knife fit for use until they had a chance to do so. We urge the utmost in caution, however, or a careless mistake will send one to the E.

Like all of the finest knives in the world, it's full of the details which announce that the knife was made with only one objective--to deliver a lifetime of outstanding performance while looking mighty snazzy all the while. It's as fine a knife to hold and feel as it is to use, the Italian equivalent of a fine vintage Sabatier. For usage, there's NONE finer, or simply makes a VERY fine addition to any collection, but whether you're a user or collector, you'll rightly come to think of his as an heirloom and something you'll be proud to pass down to your heirs.
