This is an unbelievably rare find--an outstanding chef knife made sometime in the period of late 1940's-1950's by J.

Henckels in Solingen, Germany, found here NEVER used and offered in a VERY rare, intermediate size, 16.75" long with an 11-3/8' blade, JUST a big larger than most and JUST a bit smaller than the more common 12" chef knife. It shows some very minor hints of discoloration from many decades of storage but this knife is otherwise like brand new. The age of this is important because it was made when Henckels was still hand-forging their chef knives and doing so with the utmost of skill and craftsmanship, shown in this knife by the sublimely thin taper of its blade from hilt to point. This super-fine blade was hand-forged from crucible cast carbon steel rather than having been stamped mechanically from recycled steel, as has become the practice worldwide since 1987. The difference is profound: I've had several post-1987 knives snap in mid-use, but it simply won't happen with this outstanding blade. Its blade is carbon steel--beautifully pointed and ground for excelling as every chef's most important tool in any kitchen. Used mostly for chopping, dicing and mincing but you'll find that many professional chefs prefer this style of slicing knife for a wide variety of kitchen tasks, including carving and shaving paper-thin slices of prime charcuterie, vegetables and even breads or cakes. If you've never used a carbon steel knife before, you're in for a treat. Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! This knife is perfectly balanced and will make you wonder why you suffered for all these years without one. When you hold a knife like this it feels like an extension of your hand, not like something you're simply holding. Measures 16.75" long with a substantial 11-3/8" blade. Handles are solid ebony, with no cracks or looseness--no problems of ANY kind. An outstanding piece in every respect for use or display and a true heirloom for user and collector alike.
