UNUSED Vintage Sabatier/DeHillerin Chef's STAINLESS Nogent Paring Knife RARE

Please read our Terms below for details. This is a RARE knife and more importantly one of the finest paring knives ever made, doubly so in stainless steel.

Bearing only the name (and street address in Paris) of DeHillerin, the legendary kitchenwares store that was its original retailer, this beautifully forged paring knife was probably made by one of the companies that today exports their knives to the USA under the old "SABATIER" consortium name. It is found here unused and in virginal condition, despite being well over 40 years old, one of the most useful and welcome additions to any kitchen.

Condition is MINT and this knife has NEVER been used, complete with its original blade cover from the factory. It was made in Thiers, France in the old Nogent style, named for the French city in which this construction was first produced on an industrial scale.

My personal favorite design, it includes in this knife a hand-forged stainless steel blade with integral bolster and tang, which pierces the solid ebony handle, favoring a lighter weight and a sense of "touch" that is lost in today's knives hafted with ubiquitous black plastic. Nogent knives favor a lighter weight and much greater dexterity in the hands of any chef and you might be surprised how many chefs, including Julia Child and James Beard, have written extensivly of thier love for these knives. Its blade is made of High-Carbon stainless steel, and will hold a razor's edge, with relatively easy honing.

It's factory sharp and ready to perform a lifetime of outstanding service peeling, paring and cutting--not tearing-- your favorite fruits, vegetables or whatever else you put in its way. It's 7.5" overall with a 3.5" blade, beautifully balanced in your hand, lightweight without being wimpy. This knife will serve beautifully in any kitchen, amateur or pro, providing the perfect culinary scalpel for use in performing every kitchen's most demanding precision tasks.
