This is an AWESOME find in more ways than one and while it's certainly not a piece for everyone, for anyone working with large wheels of cheese, this knife is nothing short of a godsend. Made in France by Thiers-Issard for Sabatier under their fine Four-star/Elephant line, this HUMONGOUS two-handled knife dates to the period of 1950's-60's and yet is found here in beautifully preserved condition, appearing to have NEVER been used. In terms of its materials, craftsmanship, condition and performance, it offers everything one could hope and more.

With its XL 11" carbon steel blade (it's 22" inches long overall), it's ideal for cutting through even the very toughest wheels of cheese, rind, casing and all. Knives of this configuration are also used to GREAT effect for cutting pizza, mincing vegetables and herbs or anything else you can find to reduce in a minute to a small pile of aromatic goodness. As with all carbon steel knives it must be kept dry to prevent rusting but will rewarded with superior performance, as any veteran user can readily confirm.

It will last a useful and beautiful lifetime if properly cared for and will make a BIG impression on any chef on your gift list, amateur or professional.
