Vintage Fully Forged Style XL Chef Knife with Carbon Steel Blade & Black Composite Handle Made by Thiers Issard. It exports a wide range of knives and straight razors to approximately 30 countries. They are one of the top cutlery firm in Europe. Their quality is highly regarded but their prices are also among the very highest. This is the professional high end quality Chef's knife produced from the Thiers region of France using a fully forged process. Blade, bolster, and tang are forged from a single piece of steel. A hand shaping and sharpening process using local skilled labour.
This knife has the blade fully forged from the finest carbon steel designed to take a finer edge and hold it longer providing sharp cutting satisfaction. The handle is triple riveted over the full tang to sure fitting for durability, strength, & balance.
Weight 11 - 12 oz. Maintenance Suggestion: Hand wash only in warm water after using, especially if used on foods that have acidic sauce/liquid.
