Vintage Fine Nogent Style Paring Knife with Carbon Steel Blade & Wood Handle Made by Thiers Issard. It exports a wide range of knives and straight razors to approximately 30 countries. They are one of the top cutlery firm in Europe.

Their quality is highly regarded but their prices are also among the very highest. This is the professional high end quality Chef's knife produced from France with a Nogent-style process. Blade, bolster, and rat-tail tang are forged from a single piece of steel and fitted with a handle.

A hand shaping and sharpening process using local skilled labour. The knife has the blade hand forged from the fine carbon steel designed to take a finer edge and hold it longer providing sharp cutting satisfaction. The tang is fitted with the handle to sure fitting to make it both easy and comfortable to use. It is very hard to see and photo (photo 3).

It is Sabatier - Thiers Issard. It has the good condition. Weight 1 - 2 oz.

Maintenance Suggestion: Hand wash only in warm water after using, especially if used on foods that have acidic sauce/liquid. After washing it, wipe the blade and handle completely dry.
