In person none of these exist; we will say so in the description if it may be otherwise. This superb, medium-sized and heavy-duty Swiss-cleaver knife dates to the 1950's and. Was hand-forged in Maniago, Italy's cutlery-making capital--but by whom we aren't sure.

It bears a clear makers mark with the logo of a clover, but I've never been able to find out who that might be. This design is far more popular in Italy than in most other European countries even more popular than it is in Switzerland, for whom this style is named! And could best be characterized as the perfect hybrid between the classic French butcher knife and the meat cleaver. Heavier than the knife but lighter than the cleaver, it's blade is a heavy duty and wickedly sharp force to be reckoned with.

Some Italian makers (like Alexander or Sanelli) still produce one something like it, though with plastic handles and stainless steel blades. It comes to us as part of a much larger collection of VERY fine Italian chef's cutlery pieces, some of which are rustic pieces, made by their original owners, and some, like this one, are new/vintage pieces that would become the showpieces of most serious cutlery collections. Like their collector counterparts, any professional chef would be DELIGHTED to own and use such a fine, professional grade piece of cutlery. It was made with a beautifully grained genuine cherry-wood handle--large, pleasingly curved, and as solid as a tank--fixed onto the tang of its entirely hand-forged blade's tapered tang using hand-forged brass and steel birdseye rivets. Though its blade is shiny like stainless, its blade is carbon (non-stainless) steel, and it WILL rust if not properly maintained.

This minor inconvenience is more than offset by the superior performance of carbon steel, as any chef over the age of 50 can tell you. WE, however, have done that for you, finishing this edge so perfectly razor sharp that one could literally use it to shave. We STRONGLY advise exercising the utmost caution in using such a knife as this or a careless user may very well find himself in the ER needing fingers. Like all of the finest knives in the world, it's full of the details which fully demonstrate the beauty of real craftsmanship in cutlery.

It's as fine a knife to hold and feel as it is to use, perfectly balanced, heavy duty without ever feeling heavy. Measures 12.25" long with 7.5" blade that's 2-3/8" wide and 1/8" thick at its spine, tapering toward the edge, toward the pommel and toward the point. For usage, there's NONE finer, or simply makes a VERY fine addition to any collection. And remember--we never regret the extravagances we allow ourselves in life, only the bargains.
