This outstanding old carbon steel chef's knife is beautifully balanced in the hand and will speed through any kitchen's most demanding or most delicate chopping tasks. Hand-forged by Lamson 7 Goodnow in Massachusetts, it comes in a highly-desirable medium size, yet is substantial enough to handle any job, fully capable of reducing large piles of whole vegetables into much smaller piles of aromatic goodness for inclusion in your finest recipes. It's stamped on both blade and handle, faintly but unmistakably so.

Handle is gorgeous old-growth rosewood, warm to the touch and easy on the eyes. It's an especially desirable piece, hand-forged with a carbon steel blade--one of the finest ever produced by this very fine, top maker. Thump it with your finger and it rings. This knife has been used and sharpened but condition is still excellent and in one key way better than when it was new, having been professionally edged for this sale and now more RAZOR keen than when it first left the factory--guaranteed to thrill even the most jaded chef.

If you've never before used a carbon steel knife, you're in for a most pleasant surprise. Only carbon steel takes a RAZOR edge easily and does not shatter like their stainless steel relatives especially Henckels! I've lost 3 this way. And outperforms stainless steel in almost every way.

You must wipe it down after each use but its beauty and superior performance are worth it. Measures 13-5/8" long with 8.25" blade, but in terms of performance, it comes up HUGE by any measure. An outstanding piece of vintage professional grade cutlery, offered here at substantially less than you'd expect to pay for a contemporary stainless steel chef's knife with a inferior blade made from recycled steel stock.

A WORD ABOUT MAINTENANCE: Never use a dishwasher. Wash the knife by hand and wipe clean immediately thereafter. Wipe the knife clean when using it on wet or acidic foods.

It WILL rust if not maintained properly. I apply a very thin coat of non-toxic mineral oil to blade and wooden handles periodically, to seal them from ambient moisture in the atmosphere (olive or corn oil will suffice).
