Vintage, Rare, Sabatier JEUNE (with a bunch of grapes) Chef's Knife - 10 (240 mm) - stainless blade. Sabatier knives motto (I would say all French top quality golden age knives): EASY TO SHARPEN HARD TO BLUNT.

This is what I like at these type of knives, everything is easy and friendly. It is pretty light, elegant (ergonomically constructed), good grip when working, maintains its sharpness etc. Chef's Knife - 10 (240 mm) = Blade (just the blade). Even though the blade taper gradually to a very thin tip the blade is stiff.

Wonderful balance, very good fit and finish. Stainless Steel; Made in France; Very Sharp; Professionally, Carefully Sharpened. The steel is very, very easy to sharpen and keeps its sharpness very good - a secret of the French artisans. Hard to find a stainless steel vintage knife of this type.

Good functional condition in general. Blade + handle = very finely polished. The wooden handle was cleaned, ground with three different grains, polished, varnished four times and then polished again. I bought it from France.

When I bought the knife it had a bunch of grapes (which means it was manufactured by SABATIER JEUNE) engraved on the handle. I had to grind and then to polish the handle because it was scratched and dirty. Wash it only by hand. Never put it into the dish-washing machine. I have a small sharpening business and I like to think I know what a sharp knife is.

It was sharpened only on Japanese water stones. No sparkles, the stones are continuously impregnated and sprayed with water. That means no damaging of the original steel quality (like hardening). The last stone is an 8,000 grit which means mirror polish.

I have sharpened it manually on Japanese water stones (using a lot of water which means no sparks - in order to maintain the original blade properties - like hardening). Last stone 8000 grit - mirror finish, razor sharp. I have a little sharpening business which means that the knife is properly sharpened - I like to believe.
