This is one of two old paring knives we're listing tonight that were made by Russell in Massachusetts at their legendary Green River Works and if you want the finest possible quality in a vintage paring knife, you need look no further. This beautifully preserved antique parer/peeler has everything going for it in terms of materials, craftsmanship, conditon and most impressive of all, performance.

We're often asked for finer vintage paring knives in carbon steel, primarily because they're the hardest ones to find in usable condition, but this one should exceed the requirements of even the most delusional chef. It was hand-forged pre-WWI, and it's just as good as it gets. As you can see in the photos, it was made with a hand-forged carbon steel blade with a rolled, integral blade/bolster/tang construction, hafted with what I believe is a very old composite material (old ones like this were most likely made of compressed leather, wood-amalgam or polished hard rubber and my best guess is it's the last one). Its blade retains almost all of its original factory shine, but it is carbon steel, not stainless, and is guaranteed to discolor normally with use, and to rust if not kept dry. Condition is amazing and handle is entirely free of the hairlines or other problems that so often are found in antique kitchen knives. It outshines and outclasses anything in the modern marketplace by a country mile. As you'd expect from this top maker, it was built to outlive its owner and then some. Even more than its beauty and condition, the most remarkable thing about the piece, by far, is its performance in the kitchen. It is a VERY remarkable knife, indeed, waferizing anything put in its way. Its blade enjoys a classic paring knife profile and there is NOTHING this beautiful piece cannot achieve in even the most demanding kitchen. Measuring 7-3/8" in length with a deft 3-3/8" blade that is razor sharp, having been professionally edged for this sale to be keen enough to shave a man's arm. You know how difficult it is to come by fine, smaller chef knives in carbon steel, since most knowing chefs won't part with theirs until they're dead or the knife is worn out.
