Without a doubt one of the single finest slicing knives ever made with a stainless steel blade and something of an oddball, bearing both the Sabatier and Deglon brands, suggesting it was made in some kind of joint venture. With a fantastic blade hand-forged in Thiers, France, it's the ideal tool for slicing and carving in even the most demanding kitchen, from waferizing onions to carving your Thanksgiving turkey. It represents a home run in terms of design, materials and craftsmanship--but especially in performance. Handle was made of a solid piece of ebony and fits the hand like the proverbial glove, perhaps better, and is as warm to the touch as it is beautiful to behold.

The blade is hand-forged stainless steel with an integral bolster and nogent-style tang, rat-tail in shape, and fastened at the pommel with a brass grommet. Condition is used but excellent and in one key way better than when it was new, having received a professional edging that is RAZOR keen--far sharper than when it was new. Despite the fact the blade is well over 50 years old. It measures 12.25" long with 7-7/8" blade but by any measure this is the kind of knife that will come up huge every time you hold it, and an instant heirloom for user and collector alike.
