It's been used extensively and sharpened EXPERTLY but it remains one of the finest you'll ever find. At some point in its lifetime a previous user had its handle scales replaced with red micarta, which are not only incredibly beautiful, as the photos show, but also incredibly durable and resistant to most sources of kitchen stress.

Made in Thiers, France, this superb French chef's knife comes from Sabatier's upscale "K" line of cutlery, some of the finest knives ever produced for the kitchen, imported to this country in the 1950's-60's by Intedge, of Newark, NJ. Its full carbon steel blade has been professionally edged for this sale to a razor's keen that's guaranteed to delight even the most sour-pussed chef. It was hand-forged in a one-piece carbon steel blade/bolster/tang construction, triple-riveted onto its handles with a tapered tang for maximum balance in the center of your hand.

Like all true French knives, it has a round and slightly elongated bolster between blade and handle to allow maximum control with the fingertips (German knives have never adopted this design, which is yet one more reason why knowledgeable chefs prefer French knives). As with all carbon steel blades it must be kept dry to prevent rusting, even during use, but this minor inconvenience is more than offset by the superior performance and ease of edge maintenance of carbon steel, as any veteran chef or butcher can readily confirm. When you use a knife like this, it feels like an extension of your hand, not a mere object that you're holding and its aesthetics are matched by it's performance. You will not find a sharper, more functional knife than the older Sabatiers. Measures just over 14-3/8" long with a 9-5/8" blade, which is perfectly shaped for chopping, dicing, slicing and all-around prepping your finest foods. It's getting harder all the time to find Sabatier knives of this vintage anymore, though you'll certainly want to, since the blade is forged from pure virgin steel (as was the norm prior to 1987) rather than from recycled steel stock, as is the practice today. You might not be aware that Sabatier knives (like their German coutnerparts) began to use recycled steel stock in 1987, but this knife was made prior to that from virgin iron steel. The difference is real-I've had several contemporary knives SNAP in mid-use, but I've NEVER had a vintage one do it, and as a serious collector of vintage kitchen knives, I use the vintage ones in my own kitchen FAR more often. A very slight amount of contaminant in recycled steel can be made quite evident under the stress of even normal usage.
