From one of the finest cutlery companies in the world comes this superb vintage Chef's knife from Tarpona of Solingen, Germany, a company long since out of business, having been driven under by the superior marketing forces of larger German companies like Henckels and Wusthof. Their logo was a pine tree, which was stamped along with the Tarpona name into the handle on one side of Harold Leonard's knives (unlike their cleavers, which were made in Italy); those markings is still partially visible on this knife, though faint and easy to miss. In Europe, however, and especially in Germany, Tarpona knives have an exceptionally fine reputation at LEAST on par with, and in many ways superior to, the better-known German makers. Though well over 50 years old, this beautiful knife has several lifetimes of use left in it, hand-forged with integral carbon steel blade/bolster/tang construction.
Carbon steel will hold a razor's edge, with relatively easy honing and if you've never used a carbon steel knife before, you're in for a treat. Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! Wipe the knife clean when using it on wet or acidic foods. It WILL rust if not maintained properly. I apply a very thin coat of non-toxic mineral oil to blade and wooden handles periodically, to seal them from ambient moisture in the atmosphere (olive or corn oil will suffice).
