Made in Solingen, Germany by Friedrich Herder and Sons, this beautiful carbon steel chef knife full of the kind of expensive, labor-intensive detail that ultimately contributed to the demise of this once-dominant maker of fine cutlery of every description. They've been reborn but the distinction that once marked their knives is no longer so readily apparent. Unlike today's mass-produced, hot-drop forged blades i.

By machine, this knife enjoys a fully hand-forged blade made from superior virgin steel. As such, it is quite superior to that made today by any but the most demanding custom cutlers.

I estimate the age of the piece to post-World War II, as evidenced by its outstanding and singularly most impressive design detail, the inlaid spade logo center rivet. The handle is also extra-thick African ebony and as warm in the hand as it is easy on the eyes. This design also increased the labor-value of the piece, since the top of the handle had to be fitted by hand to fit the standard flared bolster of the blade. As such, though, it is FAR more comfortable in the hand and allows a comfort and control that eludes most knives. Like all superb knives of this vintage, it has a measure of fit and finish more akin to that of a hand-built Rolls Royce than a robotically assembled Lexus, if you know what I mean.

Both are great cars but very different. A collector's piece though it may be, it would be an utter shame not to use it daily. It's blade is made of beautiful carbon steel, and will hold a razor's edge, with relatively easy honing.

For the purpose of this sale we've had it professionally edged to be RAZOR sharp and even the most jaded chef will find a refreshing world of performance as a result. If you've never used a carbon steel knife before, you're in for a treat. Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! This knife is perfectly balanced and will make you wonder why you suffered for all these years without one. When you hold a knife like this it feels like an extension of your hand, not like a weight you're simply holding. Measures 18" with a 12.5" blade--but it's razor edge and balance make it excellent for any job in your kitchen, large or small. Though the knife has been used and sharpened extensively it's beautifully preserved. The blade is razor sharp and ready to serve a useful lifetime of dicing, chopping, slicing and generally making fast work of whatever you put in its way. You might not be aware that cutlery companies like Herder began to use recycled steel stock in 1987, but this knife was made WELL prior to that from virgin iron ore. The fit and finish of its blade and handle are what you should expect from one of Germany's finest cutlery makers and it really is much more beautiful than today's composite-handled equivalent--warm to the touch and beautiful to look at. Whether you are a professional or amateur chef, you'll instantly come to love this magnificent vintage knife as one of your very favorites. Also will make an exceptionally surprising gift for the discriminating chef on your list. A WORD ABOUT MAINTENANCE: Never use a dishwasher. Wash the knife by hand and wipe clean immediately thereafter. Wipe the knife clean when using it on wet or acidic foods.

It WILL rust if not maintained properly. I apply a very thin coat of non-toxic mineral oil to blade and wooden handles periodically, to seal them from ambient moisture in the atmosphere (olive or corn oil will suffice).
