This maker produced some of the very finest professional grade cutlery ever seen in this country and their fine cleavers are highly prized among collectors not only for their rarity but also because the quality is unmatched. Though this cleaver isn't especially large, it is heavy-duty enough to dispatch just about anything the modern chef or butcher may demand from it. It not only looks beautiful but feels beautifully balanced in the hand, which will be, for most users, a most pleasant surprise.
Like all carbon steel cutlery, it will rust if not properly kept dry, but takes a RAZOR edge like no other, and outperforms stainless steel in almost every way. As with all carbon steel knives you must wipe it down after each use to prevent rusting but its beauty and superior performance are worth it. Condition is superb with a wonderful patina over its gracefully wrought cherrywood handles, which have little indentations for your fingers to enjoy a better grip upon it. They're affixed to the hand-forged blade over its tapered tang using three overly large birdseye-style rivets which are iron inside of brass. It's guaranteed to provide its lucky new user with heirloom quality for use, for display and for posterity.
Measures 14" long with 7.5" by 3.75 blade and weighs in at an impressive ounces, but in terms of beauty and utility, comes up HUGE by any measure! A WORD ABOUT MAINTENANCE: Never use a dishwasher.Wash the knife by hand and wipe clean immediately thereafter. Wipe the knife clean when using it on wet or acidic foods. It WILL rust if not maintained properly. I apply a very thin coat of non-toxic mineral oil to blade and wooden handles periodically, to seal them from ambient moisture in the atmosphere (olive or corn oil will suffice).
