Vintage XL Fully Forged Chef Knife with Carbon Steel Blade & Wood Handle Made by Thiers Issard. It exports a wide range of knives and straight razors to approximately 30 countries. This is the professional high end quality Chef's knife produced from the Thiers region of France using a fully forged process. Blade, bolster, and tang are forged from a single piece of steel.

A hand shaping and sharpening process using local skilled labour. This knife has the blade fully forged from the finest carbon steel designed to take a finer edge and hold it longer providing sharp cutting satisfaction. The handle is triple riveted over the full tang to sure fitting for durability, strength, & balance. It is the most versatile of all knives. Use for most vegetables and fruits for cutting chunks, julienne strips, bias cut, dicing or slicing. Long scratch on one side of the blade (photos 2 & 11), blade structure is good, the entire knife is good. Maintenance Suggestion: Hand wash only in warm water after using, especially if used on foods that have acidic sauce/liquid.
