Vintage 8 Blade L F & C Carbon Steel Chef Knife w/ Nogent Handle Made in USA. Early L F & C carbon steel chef knife with a rare 8 blade.Landers Frary & Clark (LF&C). Founded in 1865 in New Britain, Connecticut and by 1903, was the largest cutlery company in the world! Lf&C stopped making cutlery in 1950 and i. Nogent style knives have pretty much disappeared due to the time and cost of assembling them vs todays blades that are basically machine stamped knives, one piece knives. With a nogent knife, the hand forged steel blade has a "rat tail" tang that is inserted into the wood handle. A bolster is added where the handle and blade heel meet, further securing the handle to the blade. Nogent style knives have greatly reduced weight and often thinner blades (such as this one does). Allowing for smoother cutting performance.
This hand craftsmanship added time and expense to the making of these knives and as such, they have been weeded out in favor of stamped one piece knives that are far faster and cheaper to produce. This is a high end.
Hand forged carbon steel blade that takes and holds a finer edge longer than traditional stainless steel blades. The drawback to carbon steel is that it can stain or rust if moisture is left on the blade, so always wipe down your blade after use. The bonus is that this extra care is more than offset by the superior performance and enjoyment of using a truly. The handle appears to be made of ebony wood and is rock solid, no play or wiggle in it at all!
