Though Anton Wingen's cutlery is best known in this country for their beautiful "Black Forest" line of stag-handled tableware, they were always better known throughout Europe for their superb knives for chefs and butchers, and once you've held and used this knife you'll understand exactly why that is so. Sadly, they're also a company whose commitment to quality over marketing led to their demise and the company is now defunct.

Their knives were made in Solingen, Germany and have a Moor's head (Othello--one of their lines of cutlery is also named for this tragic, knife-wielding character from Shakespeare) as their logo, which can be found etched on the blade of this particular knife, with markings that read, ANTON WINGEN, JR. For the purpose of this sale, the knife has been expertly edged so sharp that it could literally shave your arm; we urge the utmost in caution of a careless user might find himself in the ER needing fingers.

Yes, it is THAT sharp. With its 8-3/8" blade (measures 13.25" overall), it's the only knife you'll ever truly need in any kitchen--the one you'll take with you on that proverbial desert island and never look back. This is an outstanding, hand-forged knife made from the finest quality virgin carbon steel. It predates by decades the company's conversion in 1987 to recycled steel--markedly superior to today's modern German knives.

A profound one, and I have had several newer knives break on me under duress in the kitchen as a result of the presence of a VERY minute amount of contaminant in the steel which cannot be eliminated 100% during recycling 3 by Henckels alone--the downside of what can happen when you recycle Hyundai's into knives. This simply won't happen with this knife. If you've never used a carbon steel knife before, you're in for a treat. Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! Notice how the tang of the blade tapers toward the bottom for greater balance?

This gives the knife "feel" and balance every time you put it to use. Hand-carved handles are exquisite--warm to the touch and as beautiful to look at as it is comfortable to hold. It's superb aesthetics are matched by it's performance.
