Vintage Sabatier 4 Star Elephant 3 carbon steel blade Nogent style paring & peeling knife in very good used condition. The knife was made in France and is 7-1/4 long overall. It only has some light scratches from normal use and sharpening but NO cracks.
The blade has some of the characteristic discolorations of carbon steel but holds an edge longer than a comparable stainless steel one. Also, the blade shows minimal wear from repeated sharpening and use. Please see all the pictures for more details on its condition.
